Banana and Date Sponge / Slice

Ingredients: 
  • 3 bananas, mashed
  • 1 egg and 1 egg white, whisked 
  • 6 dates, chopped
  • 2 cups of almond meal
  • 1 scoop of protein powder 
  • 1 TBS of cocoa powder 
  • 1/4 cup of desiccated coconut

Method:
  1. Combine the wet ingredients into a bowl 
  2. Add the rest of the ingredients and mix well (I just used a spatula but I think an electric mixer would be better) 
  3. Pour the mixture into a lined baking tray 
  4. Put it in an 180 degree oven for 15 - 20 mins (mine was in for 18 mins and I had the oven on for about 30 mins before I put it in) 



The Slice baking in the oven - it smelt delicious!!




The finished product cooling!!
